Bite-Sized Cranberry Muffins

During our most recent road trip to Malaysia, I made a box of bite-sized cranberry muffins to bring along. Our journey took longer than expected due to the heavy traffic at both the Singapore and Malaysian Customs. It is always good to have something on standby to munch on just in case someone gets hungry. On this occasion, we had my home-made bite-sized cranberry muffins to see us through. I like it bite-size especially for road trips as you can put the whole muffin in your mouth, making it easy to eat without having crumbs drop all over the place.
 
We all loved the cranberry muffins. Not only is it moist with lots of cranberry, it can really fill the tummy with just a few pieces. It is not too sweet and the cranberry adds flavour to the muffin making it good to chew at the same time.

Cranberry Muffins

The recipe below makes roughly 24 bite-sized muffins depending on the size of muffin tray

Dried Cranberry

Preparation
  1. In a bowl, combine the self-raising flour, sugar and salt. -> Mixture A
  2. In another bowl, mix the egg, milk and vegetable oil -> Mixture B
  3. Pour Mixture B into Mixture A and mix till just combined
  4. Add in vanilla extract and mix well
  5. Pre-heat oven to 180 degree Celsius
  6. Spray "non-stick canola oil" or any other non-stick cooking spray onto muffin hole tray
  7. Pour mixture into muffin tray filling up 2/3 of each muffin hole
  8. Bake for 20 minutes or until muffin top is golden brown

VOILA! Enjoy the cranberry muffins !

    How long can the muffin last before it turns bad?

    1. I will keep it for 3 days to be on the safe side. But it will last longer if refrigerated (about 5 days to a week depending on temperature).

  2. I always thought that muffins are butter laden, but this sounds quite healthy.... only 1/3 cup veggie oil

    1. U can try using Bertolli's Extra Light Olive Oil in place of the vegetable oil for an even healthier version. I have tried that and it tastes just as nice :)
